A Technical Instructor (Catering) is mainly deployed on (a) acquainting with the duties of Instructor (Catering) in full and supervising subordinates in performing their duties; (b) training, instructing and supervising persons in custody in correctional institutions engaging in catering work/preparation of meals and endeavouring to enhance the practical skills of persons in custody in ensuring food safety; (c) assisting the institution management in the arrangement of diets and monitoring food hygiene and equipment operation; (d) proposing improvement measures in respect of resources management, management workflow & food safety with due regard to the resources available and individual circumstances of the institution; (e) preparing vocational training materials and teaching related classes; (f) enforcing the Code of Practice of Occupational Safety & Health and related regulations; and (g) performing any other duties as assigned.
(Note: Subject to the provisions of the Prisons Ordinance; the appointee may be required to wear uniform, work shifts and live in departmental quarters.)

Candidates should (a) have completed an apprenticeship or institutional training in catering or food production; and be able to furnish evidence that they have had relevant working experience in catering and/or food production. Total period of training and working experience should not be less than 10 years [Note 1 under Entry Requirements]; (b) have attained a level of proficiency in Chinese and English Languages equivalent to Secondary 3 standard; and be able to speak fluent Cantonese and simple English; (c) undergo and pass a trade test in catering [Note 2 under Entry Requirements]; and (d) have a pass result in the Basic Law and National Security Law Test.
