- (a)負責訓練、指導與監管懲教院所內的囚犯或羈留者從事膳食工作，包括食物的收貨、貯存、前期處理、製作、餐份及中央分餐程序；
- (b)負責編製餐單、食物安全及品質檢查、庫存控制、洗潔劑化學品使用、用具及廚房衞生、爐具安全操作及一般保養；
- (c)執行職安健守則及相關規例；
- (d)處理廚房意外、突發事故及有關食物的投訴；以及
- (e)執行其他指派職務。

Instructor (Catering)
一般紀律人員(員佐級)薪級表第3點(每月15,240元)至一般紀律人員(員佐級)薪級表第20點(每月25,735元)。
職責
- (a)To train, instruct and supervise prisoners or detainees in correctional institutions engaged in catering work, including food receiving, storage, pre-preparation, production, meals portioning and plating;
- (b)to be responsible for menu planning, food safety and quality assurance, inventory control, application of detergent chemicals, utensils and kitchen sanitation, safe use and maintenance of catering equipment;
- (c)to enforce the Code of Practice of Occupational Health & Safety and related regulations;
- (d)to handle kitchen accidents, emergencies and food related complaints; and
- (e)to perform any other duties assigned.
入職條件
- (a)完成有關膳食或食物製作的學徒訓練或院校訓練課程[參閱註(1)]；或能出示證明，顯示在食物製作及/或廚房管理方面具備至少五年工作經驗；(b)中、英文語文能力相當於中三程度；及能操流利粵語及簡單英語；以及(c)須接受及通過膳食或食物製作的技能測驗。[參閱註(2)]
- (a)have completed an apprenticeship or institutional training in catering or food production
Note 1] ; or be able to furnish evidence that they have had at least 5 years' experience in food production and/or kitchen management;
- (b)have attained a level of proficiency in Chinese and English Languages equivalent to Form 3 standard; and be able to speak fluent Cantonese and simple English; and
- (c)undergo and pass a trade test in catering

- 1.申請人須在申請表格內清楚列明相關的工作經驗。
- 2.如果符合訂明入職條件的申請人人數眾多，招聘部門可以訂立篩選準則，甄選條件較佳的申請人，以便進一步處理。在此情況下，只有獲篩選的申請人會獲邀參加技能測驗，而只有通過技能測驗、能力傾向測驗及其後的遴選面試的申請人才會獲考慮聘任。
- 3.為提高大眾對《基本法》的認知和在社區推廣學習《基本法》的風氣，所有公務員職位的招聘，均會包括《基本法》知識的評核。獲邀參加遴選面試的應徵者，其對基本法的認識會在面試中以口頭提問形式被評核。除非兩位應徵者的整體表現相若，招聘當局才會參考應徵者在基本法知識測試中的表現。
